1-Pan Potato (Aloo) Sabzi | Minimalist Bakery Recipes
This sabzi — the term used in Indian cooking to describe cooked vegetables — came about during the creation of our dosa-inspired recipe. We needed a flavorful filling and this was the perfect solution! We took a lot of our inspiration from this more traditional recipe from Holy Cow Vegan.
Most potato (aloo) sabzis require peeling and blanching but we keep it simple by dicing the potatoes and cooking them directly in the pan with the other ingredients. Only 1 pan needed for this side dish or filling for Indian inspired dishes and more!
This recipe starts with sauteing the onion with mustard seeds red pepper flakes and sea salt until the onion is translucent.
