My parents and in-laws both talk about how hard it is to cook for two. I feel the same way when it’s just me and my husband. Most recipes are for four to six people leaving my tired brain to do the math to halve a recipe or eat leftovers. And when it’s just the two of us it doesn’t seem as important to make a full meal and sit down at the table as it does with the kids.
On the other hand some meals are easier to make for two than for four. For example you won’t see me baking chicken or making pan pizza for our entire family. It would take too long to make enough food for everyone. I’m going to take advantage of a smaller group and make dinners that are easy to make for two.
