How to make cottage cheese

Freshly made cottage cheese is most similar in consistency and texture to thick Greek yogurt but can also be spreadable like mascarpone or cream cheese. However it can also be firmer resembling Cotija or Queso Fresco.

Like these cheeses Quark is pure white in color and unripened meaning that once Quark is made it is ready to eat. However Quark is unique in two ways. First Quark is made from uncooked refrigerated milk (whole or skim).

Most cheeses are made by heating or scalding milk (as is the case with Ricotta or Queso Fresco) and then adding some kind of coagulating or curdling agent such as lemon juice or vinegar and then the curds are separated from the whey. The cheese is then strained or sieved and pressed salted and then aged or improved with flavorings or rennet.
