Whether it’s topped with classic Bolognese mixed with creamy carbonara or simply topped with a little butter and Parmesan few would deny that spaghetti is the ultimate comfort food. When it comes to pasta Americans consume about 20 pounds of the stuff per capita per year and favor long noodles like spaghetti.

While noodles made from wheat and eggs have a long history in both Asia and the Mediterranean the spaghetti we know and love today likely originated in Sicily in the 8th century. Since those humble beginnings the noodles have built a reputation around the world as a delicious and versatile base for some of our favorite pasta dishes.

Spaghetti like most pasta is traditionally made from durum wheat—a hard wheat that yields a very sticky flour and very little else—in some cases just water; in others eggs and maybe a little oil. On its own it doesn’t taste like much which is why the right cooking techniques are essential to transforming this bland food into something magical. But even the tastiest sauce can’t hide sticky overcooked poorly made noodles so here are some tips to ensure your noodles pass even the toughest Italian nonna’s taste test.
