Consider these the 'PICKLES' of the Middle East! #shorts

If you open a fridge or pantry chances are you’ll find at least one or two (or in my case six or seven) jars of pickles. When all else fails pickles save the day (or the dish). Bland sandwich? Add a few pickles. Need to jazz up a bland sauce or dressing? Drizzle some pickle juice over it. Want to liven up a meaty meal? Serve with some pickled veggies.

Every culture has some sort of pickling tradition. In Korea pickling and fermenting are at the heart of their cuisine with kimchi at the top of the hierarchy of pickled vegetables. In Turkey eating pickles and drinking pickle juice is part of a daily ritual. When it comes to some of our favorite dishes it’s unthinkable to serve them without their pickle companions: pupusas and curtido bánh mì and đồ chua or hot dogs and sauerkraut. So we’ve rounded up some of our favorite pickling recipes to bring clarity and balance to your table. Some rely on lactic acid fermentation while others are quick pickles. Whichever you choose you’ll want to have a few jars on hand—you’ll thank us later!
