We tend to think that the fresher our eggs the better. While that may be true for the perfect omelet many people don’t realize that fresh eggs aren’t the best choice when it comes to hard-boiling. That’s because fresh eggs have a lower pH. When they’re boiled this acidity causes the proteins to stick tightly to the inside of the egg’s shell making them difficult to peel.

On the other hand eggs that have been in the refrigerator for a week or two have a higher pH level. Therefore the egg white will not stick to the shell as strongly and you can peel them easily. Older eggs also have less moisture which creates an air pocket between the egg and the shell and makes peeling cleaner. When choosing eggs to hard-boil you also need to consider their size which will affect your cooking time. Medium-sized eggs only take about eight to ten minutes to boil but you should add an extra minute or two if you are using larger eggs.
