This one-pot chicken pasta combines lean chicken breast and sautéed spinach for a one-pot meal that’s garlicky and lemony and best served with a little Parmesan cheese sprinkled on top. I call it “Mom’s Skillet Pasta” and she calls it “Devon’s Favorite Pasta.” Either way it’s a quick and easy weeknight dinner that we dreamed up together and scribbled on a little recipe card over a decade ago and that’s still in my weekly dinner rotation to this day.
