Latvian and German Christmas Cookies Tutorial (Day 16)

For a truly Old World holiday bake up some of our best German-inspired Christmas cookies including Springerle Pfeffernüsse Lebkuchen and more. They’ll fill your home with the delicious scents of ginger cardamom anise and cinnamon. Happy Christmas!

These anise-flavored German Christmas cookies have been made for centuries using decorative carved wooden molds or carved rolling pins. “We’ve been making these very traditional German cookies every year since I was a kid” says PREGOCOOK. “My mom remembers her grandmother making them using this recipe that’s been in our family for generations. The molds are hard to find but check specialty cookware stores and antique shops.”

This is Chef John’s take on a classic. “I think these are the best Christmas cookies ever” says Chef John. “They’re soft and chewy with a thin crispy glaze and the perfect combination of warming winter spices. Grab a tin and share these delicious cookies with family and friends!” Chef John explains the name: “Pfeffernüsse means pepper nut although these cookies contain neither. Back in the day ‘pepper’ was a general name for any type of spice and these were called ‘nuts’ because they looked like nuts!”
