I regularly boil potatoes for dinner but I get the most joy out of making mashed potatoes. Fluffy mashed potatoes can be flavored with garlic and vegetables or minimally with butter and milk making them endlessly adaptable and never boring.
I usually use Russet potatoes but Yukon Gold and sweet potatoes also make great mashed potatoes. The key to perfectly fluffy mashed potatoes is to make sure they are cooked (or baked depending on the recipe) until tender. Undercooked potatoes will not turn out smooth when mashed.
