With just 20 minutes of active time in the kitchen you can whip up any of these easy and packable spring lunch ideas. These healthy tasty recipes feature delicious spring produce like spinach avocado and asparagus so you can get your greens in and enjoy something fresh and flavorful. Recipes like our Mashed Chickpea Salad with Dill and Capers and Cucumber Sandwich are perfect for a light and satisfying lunch break.

For food safety it’s best to consider how long your food can stay out of the refrigerator if you’re packing a lunch and where it will be when you get to your destination. The limit for any recipe that includes meat poultry fish cut vegetables and dairy (including soft cheeses) is about two hours according to the USDA. In warm weather it’s much shorter: about an hour. It’s best to put anything you plan to refrigerate in an insulated cooler with at least two ice packs overnight. The larger the ice packs and the closer you place them to the food the longer everything will stay chilled.
