While any vegetables are better than no vegetables there are certainly better ways to prepare them that will retain the most nutrients and better support an overall healthy diet. There are even some preparations that are bad for you such as adding unwanted fats calories sodium and sugars to your diet.

Steaming vegetables can also deplete nutrients; if cooked for too long the vegetables can become bland. To offset bland vegetables some cooks add sweet or salty sauces and dressings. The better way: Harris-Pincus recommends roasting them to retain more of those nutrients or sautéing them with herbs and spices like garlic and ginger for flavor.
