The most important aspect of caring for your kitchen knives is keeping them sharp. A dull knife not only makes your kitchen work harder it also makes it more dangerous. It is worth repeating: a dull knife is more dangerous than a sharp knife. A dull knife requires you to apply more pressure making it more likely that the knife will slip and cut you.

If you want to delve into the mysteries of knife sharpening you certainly can. But if it comes down to using a dull knife because learning to use a whetstone is too daunting do yourself a favor and let a professional sharpen it. A cutlery store can probably do it while you wait.
