Spelt is a unique grain because it is completely water soluble. Spelt grains dissolve in your mouth in seconds. This means that spelt is super digestible and is a great option for anyone who loves bread but reacts negatively to wheat-based grains. However it is not suitable for people with celiac disease because it is derived from wheat.

Spelt is technically a healthy food healthier than many other flours. It contains the entire grain including the germ and bran and is therefore high in fiber and protein in addition to its high carbohydrate content. It is sometimes called dinkel wheat or hulled wheat and is more popular in Western Europe than anywhere else. It is very popular in baked goods especially wholemeal bread and is often combined with other ancient grains.

Spelt tastes different from most flours and has an intense mineral flavor. It can also be slightly sour and even a little salty. One journalist called it “the taste of running through a dusty field” which may not sound very appetizing but wait until you have a thick slice of spelt bread in front of you freshly baked and spread with butter.
