One of the questions I get asked a lot is “what brand of curry paste do you use?” It’s easy to buy a range of red yellow or green Thai curry pastes. You can buy tubes and jars of Indian curry pastes or Japanese curry powders. They are aromatic flavour enhancers and the components I use most when throwing together a quick weeknight meal. That said it can be hard to know which ones are good and more often than not I reach for a curry paste that I’ve made from scratch. I keep them frozen flat in snack-sized bags. Just break off as many as you need and you’re good to go. This is a list of favourites and I’ll be adding to it over time! Make your own curry paste and take notes. The best part is that you can customise them to your own taste.
