If you’re strolling through the farmers market in July August and September you’ll find an abundance of summer squash including zucchini yellow squash pattypan squash and more. Unlike its winter counterpart summer squash has a relatively short shelf life. And while pickling drying and freezing are viable options summer squash is best enjoyed fresh. From grilling and roasting to blanching and sautéing there are a variety of ways to enjoy summer squash but with so many varieties out there it can be hard to know where to start.
