This delicious recipe for African Chicken Stew was inspired by my friend from Sierra Leone West Africa who often cooks for her family. Many of the ingredients can be adapted just use what you have on hand. Serve with white rice and garnish with unsalted peanuts and freshly chopped cilantro or parsley.
