There’s no actual frying going on in an air fryer that’s because an air fryer cooks food via convection baking. So air fryers are essentially convection ovens. With real frying your food is directly submerged in hot oil. The oil completely surrounds every inch of your food so it crisps evenly. With regular baking your food will be less crispy because baking cooks by surrounding your food with hot air and air is not as good a heat conductor as oil.
