Ají verde is a green hot sauce that is often served in Peruvian restaurants. It is often made with cilantro mayonnaise lime juice and hot peppers but everyone's recipe is a little different!

Our search for the origin story of this delicious sauce turned up little. However similar sauces using cilantro and ají peppers are said to have been made in Peru Bolivia and Colombia as far back as the 13th century. Peruvian chef Luis Sanchez shares his version in this video but says it’s not necessarily a Peruvian sauce since such a thing isn’t made in Peru.
