My favorite Alfredo sauce requires a bit of blending as it tends to get lumpy in places if I’m not careful. But when my trusty 7+ year old G&E blender crashed on me last week and we were promising new parent friends a pasta dinner later that night I had to improvise.
Luckily I was able to make a few adjustments and even IMPROVE my original alfredo recipe! I love it when that happens. It calls for new recipes to share.
My alfredo is based on olive oil instead of butter and requires simple ingredients that you probably have on hand right now. Pesto Parmesan cheese milk flour garlic vegetable or chicken stock. That’s it! And it’s so creamy and delicious that you wouldn’t believe it’s actually healthy.
