You can find different flavors of tomato curry from every corner of India and many points in between. This simple version takes very little time to cook and is a great way to use fresh tomatoes when they are in season. My recipe is inspired by the Andhra tomato curry. This style uses pieces of onion and tomato cooked just tender in a generous amount of oil which flavors the curry and gives it volume and texture while cumin and mustard seeds provide crunch and flavor. From this starting point there are many variations to the Andhra tomato curry itself. Every household has its own way of making it. There is no “right way” to make this tomato curry. Different versions may use asafoetida or curry leaves ginger or garlic. Some may not use onions at all and some may add potatoes as well but these are all just different ways of making this tomato based curry.
