This is one of my favorite classic French desserts. The name comes from and was made famous by the Tatin Sisters of France in the early 1900s.

I believe they had a hotel in Paris but don't quote me on that (Editor's note: fact-checked to be true). Feel free to quote me if you want it shouldn't matter if I get the geography wrong the important thing is that I get the recipe right.
