I love using apricot juice as a base for this apricot chicken curry dish. Chicken drumsticks are a budget meat option but any bone-in cuts will do. Reduce the Madras curry and chillies to keep this mild and flavourful or add more if you like it spicy! Serve with rice for a complete meal.
