I meant to post this weeks ago but my notes somehow got buried in a flood of files on my desktop. Better late than never right? Here goes. I had a big bag of arugula left over from my nephew Jack’s first birthday party that I needed to use up. I decided to throw most of it into the food processor and turn it into a sort of arugula pesto. Not very creative I admit but the resulting puree was amazing – electric-green with a spicy kick. It’s exactly the kind of thing to spread on a sandwich over hot pasta or you can do what I did and work it into a bowl of thick chewy wheat germ. The crunch of the arugula is tamed by the creaminess of the pine nuts and the saltiness of the grated Parmesan and chopped Kalamata olives offsets the wheat germ nicely.
