A month ago at the suggestion of my neighbor (who happens to be the partner of the neighbor who challenged me to make apple pie and is therefore definitely a person with good taste) I made kaiserschmarrn a grated pancake for my kids for weekend breakfast. It was predictably delicious and this being 2019 I posted a photo of it on Instagram Stories in the moments before my kids ate it. It was only then via an avalanche of DMs that I learned how beloved it is.

Kaiserschmarren – Austrian Torn Pancakes – Food Wishes

"Looks exactly like the one I had years ago in Salzburg!" "We eat this for dessert!" "This is our Christmas breakfast every year with sour jam and pureed plums!" "We call this the Emporer's Mess." [Apparently Franz Joseph I was very fond of it.] "Next to apple strudel traditional Kaiserschmarrn is one of the most famous and iconic Austrian dishes." "If you order it at an Austrian restaurant you will almost certainly get stewed plums (zwetschkenröster) and/or applesauce on the side." "It is best cooked in butterschmalz [clarified butter or ghee]." "I hope you skipped the rum-soaked raisins – yuck." But also: “You forgot the rum-soaked raisins!” [I didn't but I found them distracting.] “Tip: Kaiserschmarrn is perfect when it's still a little creamy on the inside.”

When you try it you’ll understand why. The batter is simple similar to that of a crepe or Dutch baby but you beat the egg whites separately and fold them in at the end resulting in a fluffy buttery-fried mega pancake. But wait there’s more! You then tear grate or chop it into bite-sized pieces and keep frying until each one is a gloriously golden brown edge with a custard centre. Finished with a dusting of icing sugar and served with tart fruit compote (I’ve tried my hand at plum below) or apple sauce it’s a dream of a weekend breakfast. It could be a dessert too. It could be a lunch as my neighbour tasted it. I particularly like the way it looks simple yet feels a little bit festive the way I hope all our weekends will be.
