One of my favorite foods growing up was frito chili pie. I know it’s not healthy – guilty as charged. But so good! Lots of crunchy salty fritos with chunky chili and handfuls of cheese – so good. And no vegetables in sight; just the way I liked it back then. Oops.

But don't worry! Things have changed. I love vegetables now. In fact most nights I ask for "something with a lot of vegetables" for dinner. It's John's favorite (eye roll).
Further evidence of my ever-changing healthy tastes is my love of baked goods over fried goods. Baked chips are (almost) as good as the real thing. So when I recently rediscovered my love of homemade tortilla chips and tortilla soup via the ever-talented Kate I couldn’t help but dream of recreating my old favorite: chili cheese fritos.
These fritos are so simple and you probably already have all the ingredients on hand. All you need is the seasoning mentioned above for corn tortillas and a little oil. I also added a pinch of nutritional yeast for a vegan "cheese" flavor but that's definitely optional.
