EASY HOMEMADE RECIPE FOR FRIED COKE

Serious Mealtimes / Alexandra Penfold

I first heard about “fried Coke” a few years ago. Credited as the creation of fry master Abel Gonzales Jr. (the same guy who brought you fried butter) this over-the-top snack consisting of cinnamon sugar-dusted Coca-Cola-flavored beignets drenched in Coca-Cola syrup and topped with whipped cream and a cherry took the Texas State Fair by storm in 2006. And I’ve been curious about it ever since. Unfortunately a trip to the Texas State Fair is out of the question for me anytime soon so I set out to recreate the dish at home.

Like my recent funnel cake experiment I wanted this one to be super easy. I’d read that Bisquick was the secret to beignets so I dutifully bought a box and started experimenting. Now that I’ve made Long John’s pączki potato doughnuts and zeppole I think I’ve got quite the reputation as a dough fryer. Still hats off to Mr. Gonzales: fried Coca-Cola nuggets aren’t easy to crack. It’s all about getting your dough balls just the right size. If you make them too big the outsides will overcook before the insides are done.
