Vibrant flecks of chopped spinach and lemon zest toasted almond slices and gooey bubbling cheese all enveloping firm little pasta shells. Spurred on by many days of dark skies and lots of rain this winter I’ve spent an unnatural amount of time coming up with ideas for a pasta casserole. I wanted to do something a little different from the standard tomato-based pasta casserole. I also wanted to keep it a little lighter than some of the cream and/or egg-based classics. I finally tried it recently and it was good! It’s actually hard to come up with a relatively healthy pasta dish (well I’ve been hesitating about it for a while) – like the pasta salads we’ve talked about before – everything just has a tendency to get too starchy too much sauce or cheese and get thrown off balance. Anyway as for the casserole this is my attempt to rein it in a little and still make it taste delicious.
