Kyukyusu (also spelled kuku) is a fried omelette often eaten as an appetizer during the springtime celebration of Nowruz in countries that were historically part of the Persian Empire. This version features lots of fresh herbs and chunks of smoked fish. Part of the fun is the garnish so set out plenty of options so guests can customize their portion to their taste.
