This easy oatmeal takes the buttery bananas of classic Bananas Foster (sans the booze and ice cream) and adds a few fortifying spoonfuls of peanut butter.

Serious Mealtimes / Vicky Wasik
They say breakfast is the most important meal of the day. I don’t know if that’s true or not because I hardly ever eat it. Not because I don’t like it and not because I don’t need it – usually I almost pass out from low blood sugar before I’ve even swallowed my first bite of the day – but simply because… I have no idea why. I really should eat breakfast.
There was a brief period when I did this when I was in college. I made it a point to eat a big first meal of the day every day and I felt like a million bucks for the few months that it lasted (which come to think of it would support the claim that breakfast is the most important meal of the day). I had a microwave in my dorm room and I would use it to make a bowl of oatmeal from rolled oats. Then I would mash a banana in it and sprinkle some walnuts on top. It kept me busy until at least the early evening until two hours of translating the Aeneid into advanced Latin and another couple of hours of discussing Foucault and hermaphroditism in medical anthropology. That's the power of oatmeal for you.
