There are a few things that make my basic chocolate cake recipe different from others but before I get into the details I need to write a little about the type of chocolate cake we are dealing with. This is not one of those layered fancy chocolate cakes. I am not very good at those. This is a simple relatively unremarkable chocolate cake. An everyday chocolate cake that you might not make every day. It is a chocolatey moist not too complicated and delicious cake. I make and serve the icing in one pan – usually a Pyrex that I picked up at a yard sale years ago. There is no added sugar to the cake or icing (I use maple syrup) and whole wheat flour is used in the batter. A generous layer of fresh chocolate whipped cream icing tops it all off (also sweetened with maple syrup).
