Pot Pinto Beans Recipe | Frijoles De La Olla recipe

While beans are eaten in many countries in Latin America and around the world there is perhaps no other country that is as closely associated with this food as Mexico. Beans are prepared there in a thousand different ways but the most basic (and the way most other bean dishes begin) is what is called frijoles de la olla or “potted beans.”

Frijoles de la olla are traditionally cooked in an earthenware pot which adds a lovely rustic flavour to the beans. However they can also be cooked in a standard metal cooking pot pressure cooker or slow cooker and will give a delicious result.

As with so many staple foods in the culture each Mexican cook has his or her own way of preparing beans. What follows is a basic recipe to get you started on your own version.
