The word "teriyaki" originally described a style of cooking; it referred to meat or fish covered in a sweet and salty sauce and grilled or cooked over an open fire. The sauce is traditionally made with soy sauce and two types of rice wine mirin and sake. Today the word is used to describe the sauce as well as the cooking style.

“Teriyaki” encapsulates the notes of both ideas. “Teri” comes from “tare” a word meaning glaze or glaze and describes the glossy sheen that the sauce provides. What we call teriyaki sauce is one of many sauces collectively called “tare” in Japan. “Yaki” refers to cooking over direct heat a fundamental concept also found in the words yakisoba yakitori okonomoyaki teppanyaki sukiyaki and many more.
