It is a popular dish in Tanzania and on the beautiful island of Zanzibar where it is widely sold in local bars and Indian BBQ restaurants.
The meat is marinated in a mix of herbs and spices to bring out its natural flavor. If you are using beef the meat should be marinated overnight. This will make the steak more tender and cook it faster.
This recipe calls for raw papaya as a tenderizer but vinegar can also be used. This is a Swahili recipe using ukwaju sauce (a tamarind based sauce). The sauce really adds a lot of flavor and spice to the dish. Mishkaki can also be eaten with fries or chip mayais.
