I can make great pizza but it took me a while to learn how. Great pizza starts with great dough and for most of the past decade my pizza dough approach has stuck close to Peter Reinhart’s Napoletana pizza dough recipe. It makes a wonderfully flavorful crust using a delayed fermentation method. But in recent years I’ve wanted to ditch the stand mixer and simplify where possible. So things have evolved in a good way!
