"Better Than Beef" Meatless Meatloaf – Food Wishes

Remember that time a certain president got caught not having a clue how much a gallon of milk cost? Sometimes I am. When I’m buying ingredients for a video I’m usually so focused on the what and the how that I don’t pay much attention to the how much? Plus I can use a company credit card which also contributes to my forgetfulness. So when I see prices are high we have a problem and beef prices are high.

That was the main motivation for this beefless meatloaf which I highly recommend you make regardless of the meat cost because this was absolutely delicious especially alongside some mashed potatoes and gravy. Besides being super hearty and delicious it’s arguably better for you nutritionally and if you’re one of those people who wants your grandchildren to inherit a livable planet it’s probably better on that front too.

The secret here besides sneaking in a few spoonfuls of good beef base is to make sure you cook your mushrooms until they are very well caramelized. This increases the "meatiness" considerably and will give your bread a nice brown beefy color. It's amazing how much adding this to the meaty look and feel adds to the experience. Anyway as I joked in the video you'll have to be the judge of whether this is indeed "better than beef" but it is cheaper which is just one reason I hope you give this a try soon. Enjoy!
