This is no ordinary enchilada because instead of tortillas we use roasted plantain slices. Not only does this provide a natural sweet balance but it also makes this recipe gluten-free and grain-free!

Plantains are grown and eaten in many tropical regions of the world particularly the Caribbean Latin America and West Africa. They are related to bananas but are generally larger and starchier. Mmmm starchy.

They can be eaten when they are green (unripe) or yellow (ripe). However in this recipe we recommend spotted yellow ripe plantains which are sweeter and caramelize nicely.
