Anyone who has ever traveled abroad can recall the experience of coming home and struggling to recreate a favorite dish. Even with the simplest ingredients production methods can vary from country to country changing everything. Such was the case in my quest to recreate the black sesame ice cream I fell in love with during my time in Japan. It was always pitch black and outrageously nutty with a pleasant bitterness like dark chocolate and an almost savory edge.
