I’ve experimented with quite a few gingerbread recipes in the years since I featured Regan Daley’s Black Sticky Gingerbread cake. There have been single double and triple gingerbread cakes. Cakes sweetened with spices and others with experience at first and second base. They’re all really good. But hers is the one I always come back to when push comes to shove. And since it’s been in the archives for so long I thought I’d spin my updated version today complete with tweaks and new insights. Enjoy! This is what I said then: "…The Black Sticky Gingerbread comes together like the cake it is – straightforward uncomplicated with a bit of pizzazz and attitude. Melt the butter with the sweeteners stir in a few eggs fold in the fragrant spices and flour garnish with some freshly grated ginger and pour the batter into the prepared pan. The cake is ridiculously dark dense flavoursome and delicious. Not the prettiest cake you'll ever make but one of the tastiest. The burnt caramel crust that forms on top of the cake is ridiculous and that was the first part of the cake to go."
