So let’s ignore the fact that I talk about pound cake in my spare time for a moment and focus on the important thing: pound cake is amazing and often passed over for fancier fluffier fare. And yes when it comes to making croissants or even muffins I strive to make them fluffier. But pound cake is a different story. I want my pound cake to have a firm almost dense crumb the kind where you bite into it and your teeth leave indentations. It should also be very moist but not greasy or dripping with butter. I like my pound cake to taste like vanilla (because of those early Sara Lee days) and be just sweet enough to pair well with a cup of strong coffee but not so sweet that you don’t want a thick slice.
