One of my earliest memories of baking was a demonstration given at my preschool where bread dough was shaped into turtles and birds and intricate braids. Scissors were used to create the little bread spikes on the back of alligator and hedgehog shaped loaves. Lobster claws were cut in the middle for visual effect and each figure was baked in an oven until plump golden brown and fragrant. We each got to take one home. The whole experience blew my five year old mind. I still love to bake intricate braided breads. Especially when things are tumultuous in my life. I have made this one a few times for the holidays and decided to recreate it last week to photograph and share with you. It is made with a rich buttery yeast dough. Each of the four strands in the braid is filled with a caramelized onion and grated cheese mixture. If you’ve never made braided bread before I’ll admit that stuffing the strands adds a layer of complexity but the whole process is incredibly forgiving if you put your mind to it and persevere. If you look at the shape below and think “no” remember that it’s a simple braid rolled into a snail shape.
