Read almost any article about cooking squid and you’ll likely come across the same observation: that it can be cooked quickly or for a long time but anything in between will result in a mouthful of rubber. Most recipes however focus on the quick-cooking options like baking grilling and sautéing. I’m guilty of it too: the ease of a five-minute squid recipe is hard to resist.
