Calamari Marinara – Tender Calamari in Tomato Sauce Recipe
Serious Mealtimes / Vicky Wasik
Read almost any article about cooking squid and you’ll likely come across the same observation: that it can be cooked quickly or for a long time but anything in between will result in a mouthful of rubber. Most recipes however focus on the quick-cooking options like baking grilling and sautéing. I’m guilty of it too: the ease of a five-minute squid recipe is hard to resist.
I want this to be a reminder to myself and all of you to break out of this fast squid rut because long-cooked squid is perhaps one of the most delicious ways to prepare it. And honestly “long-cooked” in squid terms usually only means 30 minutes. That’s fast by most other standards.
