This is one of our summer classics. It’s quick and easy to make; it’s good for you and delicious. It’s also incredibly versatile. The first night it’s a stand-alone salad; the second night you heat up a portion in a pan with an extra canned vegetable and it’s a side dish. If you have a favorite vegetable add it; if you hate corn leave it out. Enjoy and eat without guilt!
