If there was one thing I could count on from my Grandma Olga Mae it was that there were always biscuits for Sunday dinner. She usually made her flaky buttermilk biscuits before she went to church but every now and then she would whip up what she called a sponge cake. I now recognize them as being very similar to butterscotch biscuits.
When I developed my own recipe for butter swimming biscuits I started by melting butter in a square baking pan. Then I made what can only be described as a pourable sponge cake batter and brushed it into the pan with melted butter.
