Some of you may have figured it out already but for those who haven’t I’ll tell you something: this recipe is a little ridiculous because a classic Caesar dressing is mayonnaise. Think about what’s in it and how it’s made: egg yolks mixed with spices like Dijon Worcestershire garlic and lemon juice then slowly emulsified with oil. Yes that’s a mayo okay.

So what makes this Caesar mayo more mayonnaise-like than mayonnaise Caesar dressing already is? Well mainly the viscosity. To work as a salad dressing the mayo in a traditional Caesar is kept thin by adding a relatively small amount of oil per egg yolk. Only when you add more oil does the mayo thicken into a more recognizably mayonnaise-like texture.
