Cake flour as the name suggests is often used in cakes. It is a soft low-protein fine-textured wheat flour milled from the endosperm of the wheat grain. It is lighter and has very little gluten which results in soft less dense baked goods. All-purpose flour generally has a protein content of 10 to 13 percent while cake flour contains eight to nine percent protein.
