This soup is a distant relative of the lively brothy tom yum soup you’re likely familiar with from many Thai restaurants. Part of its magic is the way (a good version) combines sweet and sour balancing spiciness tangy heat and just the right amount of saltiness. There are endless interpretations of it but this is how I make it in my (California) kitchen. It’s evolved over the years and this version is vegetarian/vegan made with a fresh tom yum paste that highlights all the seasonal produce on hand. It evolves with the seasons and I love using leftovers the next day to add dimension to rice bowls or as a liquid to poach eggs in or as a broth in a breakfast porridge.
