Apple cider vinegar also known as apple cider vinegar is made from fermented apples. Apples are first crushed and pressed to make apple juice then mixed with yeast to ferment. Once the natural sugars have been converted to alcohol a second fermentation occurs where bacteria convert the alcohol into acetic acid (this is the role of the “mother”; more on that later). Acetic acid is the primary component of vinegar and is what gives vinegar its characteristic tangy sour flavor profile.
