If you’ve been reading The Food Lab for a while you might remember an article I wrote a few years ago about this question. I think it’s important enough to warrant a summary.
It’s a great question and one I have a personal history with. One of my very first restaurant jobs was as a line cook at No. 9 Park a modern Italian/French restaurant in Boston. I worked at the pasta station for about nine months where it was drilled into my head that the water in the pasta machine had to be boiling before I put the pasta in otherwise it wouldn’t cook properly and would stick together like mush which caused a commotion in the forza as if millions of Italian grandmothers had suddenly screamed in terror and been suddenly silenced.
