We’ve all been there: You walk to the fridge for a small charcuterie board for mid-afternoon grab your favorite piece of cheese and then the bad news arrives. It’s moldy. While there are tricks to keeping cheese fresh for much longer it’s inevitable that you’ll end up with a dairy product that goes bad a time or two.

So what do you do if you don’t want to throw away a delicious piece of slightly moldy cheese? A common solution is to cut away the moldy portion of the cheese but is that safe? We spoke to some cheese and health experts to find out.
