Tip of the week – Can you freeze cheese? You'll be surprised
While it's true that fresh cheese is always best you can also freeze Swiss cheese (American Emmentaler Gruyère) and it will still taste great.
Because it’s a semi-hard cheese like cheddar Swiss it holds up better in the freezer than softer cheeses like Brie. That said almost all cheeses become more crumbly after they’ve been thawed. So while your frozen Swiss might not be ideal for a cheese plate or sandwich it should do just fine in a sauce or prepared dish like a chicken cordon bleu casserole or three-cheese penne pasta.
Frozen blocks of Swiss cheese keep best and should weigh no less than half a pound each. You may want to keep this in mind when purchasing your cheese if you plan on freezing it as it is ideal to leave blocks in their original packaging (which is usually airtight).
